WThis is a home-style interpretation of a beverage found on our latest drinks list. This is a batch prepared mix that is bursting with essence of the festive period, which makes it ideal for your holiday party. Any leftover syrup for morning drinks, puddings, or to mix additional servings of this cocktail.
Bikini Recipe
Serves 10 people
For the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Cocktail (yields 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Cordial: Put every ingredients in a pot, heat until it reaches a light boil, stirring to dissolve. Then, turn off the burner allowing it to cool completely. Decant to a sterilised bottle, close it and store in the refrigerator, it will last for around one month.
To make Batch Mix: Combine the specified spirits and syrup in a sizeable container, let it rest for an hour, then strain preferably using muslin, to ensure it's perfectly clear.
To serve: Add 85ml of the batch mix into a stirring glass containing ice, and agitate gently for a minute to cool it down. Filter into a cold coupe glass or a similar vessel, decorate with the cranberries and complete it with a light spray with the mandarin essence over the top.
